Ingredients:
1 cup whole wheat flour
3 1/2 – 4 1/2 cups bread flour
1/4 cup sugar
2 packs active dry yeast
1 1/2 teaspoons salt
1/4 cup + 2 tablespoons olive oil
2 cups milk
1 egg
2 cups sliced black olives
8 oz crumbled feta cheese
Method:
In a large mixing bowl, combine 1 cup of wheat flour, 1 cup of bread flour, sugar, yeast and salt.
Heat milk in a saucepan to 120 degrees.
Add warm milk, olive oil and egg to dry ingredients; beat with an electric mixer until mixture is well blended and smooth.
Stir in sliced olives and feta cheese.
Add 2 1/4 cups of flour and mix completely. Add enough additional flour, 1/4 cup at a time, until dough is easy to handle.
Turn dough out onto a lightly floured surface and knead for 5 minutes or until dough is smooth and elastic. If the dough begins to stick to your hands while kneading, dust it lightly with flour.
Form dough into a ball and place in a greased bowl and cover with plastic wrap or wax paper and a tea towel; set aside and let rise until doubled in bulk, about 1 1/2 hours.
Punch dough down, divide dough into two equal portions and form into round loaves. Place each loaf on a greased baking sheet inch; recover and let rise for 45 minutes.
Preheat oven to 350 degrees 20 minutes prior to baking. Brush top of loaves with olive oil. Bake loaves 35 – 40 minutes. Loaves should sound hollow when tapped on top.
Cool loaves on a wire rack for 30-45 minutes before slicing and serving. If made ahead of time reheat in the microwave.

3 cups flour
1/4 cup margarine, melted
dash of salt
3 Tablespoons sugar
2 egg yolks
1 1/4 cups water
jelly
oil for frying
powdered sugar

Combine the yeast mixture with the flour mixture. Slowly add water while stirring. When batter is smooth, cover the bowl with a towel and let it sit and rise again
2. To make the doughnuts: After the batter has risen, pour it onto a floured surface and roll it out. Use a glass with a small opening to cut out circles of the dough. Cover the doughnuts with a towel and let rise.
3. To fry the doughnuts: Heat oil in a deep pot until very hot. Drop the doughnuts into the oil and fry on both sides until brown. Remove with a slotted spoon and sprinkle with powdered sugar.
